Best Oatmeal Raisin Cookies

"These are just to die for, be careful not to overcook them, you don't want them to be dry! They are divine! I have a tendency to make large cookies, so my recipe never makes the quantity suggested.........lol



Ingredients:
  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 2 large eggs
  • 1-1/2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups quick cook oats
  • 2 cups raisins
  • 1 teaspoon vanilla extract

Directions:

1. Pre-heat oven to 350°F. Cream together the butter with both sugars in a large mixing bowl. Add the eggs, one at a time, blending well after each addition.

2. In a separate bowl, blend together the flour and baking soda. Add the dry ingredients to the creamed mixture and blend.

3. Add one cup of quick cook oats and one cup of raisins to the cookie dough and blend well. Add remaining oats and raisins and mix well, again.

4. Drop by the heaping teaspoon onto an ungreased cookie sheet. Bake for 8 to 10 minutes. The cookies should look not quite done when removed from oven. Allow the cookies to set on the warm baking sheet for several minutes before removing to a wire rack to cool completely.

Makes 3 dozen cookies.
